Not quite a cake but not entirely quick bread either, this Carrot Cake Loaf is amazing! This loaf has all the carrot cake essentials and a touch of extra spice. The toasted pecans bring a nutty, buttery flavor and added crunch. I’ve topped mine with a cream cheese glaze. Dessert or an indulgent breakfast, you’re going to want to make this for Easter or any other time of the year. I love a good “throw it in the bowl” recipe and while this is simple to make, it tastes like you spent some time in the kitchen. Wink, wink!
