Everything Seasoning Honey Butter Muffins

What won’t I try putting ‘everything’ seasoning into? If you’re like me and you love this stuff, you’ve tried it on toast, in hummus, in dips, in waffles and even in cookies. I initially made these muffins on a whim for National Muffin Day and after the holidays and baking all weekend, I ran out of eggs. Sans eggs, these muffins are moist, rich and have a perfect bounce to each bite and I blame that on the buttermilk. When without, use buttermilk-I’m convinced. There is some sugar in these but it’s truly the honey that gives these muffins a sweetness that shines through. The honey along with the ‘everything’ seasoning play off one another oh so well.
Everything Seasoning Honey Butter Muffins
INGREDIENTS
2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup light brown sugar
1/2 teaspoon salt
3 teaspoons baking powder
1/4 teaspoon baking soda
1 1/2 cups buttermilk, at room temperature
1/2 teaspoon pure vanilla extract
4 tablespoons butter, melted
1/3 cup Honey
2 tablespoons EBTB seasoning plus more for sprinkling
DIRECTIONS
Preheat oven to 375°. In a large bowl whisk together the dry ingredients. Set aside. In a measuring cup, add vanilla extract to buttermilk, whisk lightly. In a medium sized bowl, add melted butter and honey, whisking until fully combined. Pour in buttermilk mixture and stir. Lightly fold in honey-butter mixture to dry ingredients making sure to not over-mix. Stir in EBTB seasoning. Pour muffin mixture into greased tins and sprinkle more seasoning on tops of muffins. Bake for 18 to 20 minutes. Makes 12 muffins or about 8 large ones.
