Rich and Creamy Rice Pudding

My mother was not necessarily the most passionate person in the kitchen nor did she bake often but when she made rice pudding, I quietly watched and observed the process. I patiently waited for the pudding to settle so I could dig in. Rice pudding is comforting warmed or eaten cold, with or without raisins and always, always with cinnamon. I've adapted her recipe to achieve the richest and creamiest rice pudding.

Making rice pudding is a process and one that shouldn't be rushed. It's easy to under or overcook the rice so it's important to be aware of that.
